Cool Autumn Evenings


We are really enjoying the cool evenings here ... FINALLY!! Tonight we ate dinner out on our patio. Don't let those smiles fool you. They absolutely HATED my dinner! We had Cassoulet with whole grain brown rice and bread. The recipe was a new one I got from a recipe exchange at the Mom's Night Out I hosted last week.


I'm afraid my food critics didn't approve. But we still enjoyed sitting outside. Craig and I had seconds and the baby licked her bowl clean. It could have been worse. We could have been eating indoors. I plan to try this recipe again in two weeks. Eventually they'll learn to like it!!

Just in case your family has better taste buds than mine:

Cassoulet (French Stew)

1 lb. smoked sausage, cut up
1 can whole tomatoes, cut up, with juice
1 can black beans
1 can kidney beans
1 can navy or northern beans
1 onion cut up
½ c. dry red wine
1 ½ t. dried thyme
½ t. salt
2 cloves chopped garlic
3 carrots slices
1 can (15 oz.) tomato sauce
2 T brown sugar

No need to drain beans. Put all ingredients in dutch oven. Cover, bake in 375°oven for 1 hour or until carrots are tender –OR- Simmer on stove for 1 hr. till carrots are tender. Great served with French bread. To stretch it more, serve over rice.

I thought this recipe was pretty normal too. No squid or snails or peppers. Seemed child friendly to me.

But my kids don't like to try new things. *sigh*

So I'm helping them get over this habit by introducing something new every week. ;-)

Honestly, they could eat spaghetti every day of the year. I bought the book Seven Silly Eaters for this very reason!!

Sounds yummy to me! I made the much less sophisticated 5 Can Bean Soup from the Hillbilly Housewife site, fully prepared for everyone to hate it but everyone but Leo (who usually eats anything!) loved it & practically licked the pot clean.

Now I'm going to have to try this :)
